Sous Vide Pumpkin Fries Recipe

These fries were also part of our Sous Vide Summit grab bag challenge. The double fry insures that the ending fries are soft and tender inside and crispy outside.

Sous Vide Pumpkin Fries Recipe

  • Total Time: 1 Hour
  • Cooks: 185°F (85°C) for 10 minutes
  • Serves: 4 - 6

Ingredients for Sous Vide Pumpkin Fries

  • For the Fries

  • Peel and cut into French Fries or desired shape
  • Brine
  • Percentages based on the weight of Water
  • 2% Salt
  • .30% Baking Soda .40% Sugar
  • To Finish

  • Cinnamon / Sugar Mix (optional)
  • Your favorite french fry dipping condiment (optional - they're delicious all on their own)

Cooking Instructions for Sous Vide Pumpkin Fries

For the Fries

Peel pumpkin and cut into french fry shape or desired shape

Mix all the brine ingredients in a separate bowl until dissolved.

Stir well and add some brine to each bag containing Pumpkin Fries.

Vac-Seal and Brine for 3-5 hours

Process at 185f for 10-Minutes

Rinse and Cool

To Finish

Dry them well. The first Fry is at 270f for 6-Minutes

Freeze

The second Fry is at 380f Until the desired Color is reached.

Toss in cinnamon sugar, sprinkle on kosher salt, or just eat them as is - it's your choice!
