Sous Vide Farro Recipe

Farro is one of the easiest whole grains to master with sous vide. Cooking it in a sealed bag ensures every grain absorbs maximum flavor while maintaining its pleasantly chewy texture--without the guesswork of stovetop cooking. Whether you're serving it as a hearty side dish, adding it to salads, or building grain bowls, this simple recipe delivers perfectly cooked farro every time.

Sous Vide Farro Recipe

  • Cooks: 194°F (90°C) for 40 minutes
  • Serves: 4 - 6 as a side

Ingredients for Sous Vide Farro

  • For the Farro

  • 200g dry farro (about 1 cup)
  • 800g water
  • 80g salt (1% of water weight)

Cooking Instructions for Sous Vide Farro

For the Farro

Preheat a water bath to 194°F (90°C).

Add the farro, water and salt to a bag and use the water displacement method to submerge in the water bath

Cook for 40 minutes

Remove the bag and pour contents through a fine mesh strainer

Spread the drained farro on a sheet pan lined with paper towels and allow to cool and drain more before moving to the refrigerator.

Chill until ready to use.

*NOTE: I often use the water displacement method and drape the open edge of the bag over the side of the container. This way I can use a spoon to pull out a few grains to test doneness as it gets closer to the cook finishing time.
