Sous Vide Artichokes Recipe

While the look daunting, once you learn how to trim them, artichokes can be simple and quick to prepare. The key is to use lemon on them throughout the cutting process to prevent oxidation. These are great added to a salad or pasta dish.

Sous Vide Artichokes Recipe

Ingredients for Sous Vide Artichokes

    3 ea Medium / large artichokes
  • 1 Lemon as needed
  • Citric acid powder as needed
  • Neutral oil as needed
  • Salt to taste

Cooking Instructions for Sous Vide Artichokes

1. Peel and "turn" the artichokes. Use half of the lemon to rub the artichoke as you work to prevent it from oxidizing. Use the other half to make acidulated water for reserving the artichokes as you work. You can add more acidity with lemon juice or citric acid powder if needed.

2. Drain the artichokes and pat them dry. Cut them into 4-6 pieces depending on size.

3. Season the artichokes with neutral oil and salt to taste.

4. Vacuum pack the artichokes and cook them at 83°C for 3 hours.

5. Cool the artichokes completely and cut the stems into smaller pieces if you need to. Reserve in the fridge.
